Peach Rum Spritzer

This delicious cocktail is a treat for almost any occassion.  One batch makes 8 generous glasses that are not too tart and not too sweet.  Omit the rum and replace it with an equal amount of water, and you can turn this spritzer into an alcohol-free mocktail perfect for baby showers and other occasions where alcohol is not being served.

And if you can't get your hands on fresh peaches, 8 cups of frozen sliced peaches will work in a pinch.

Peach Rum Spritzer

  • 4 pounds of peaches, peeled, pitted, and cut into pieces (about 8 cups)
  • 1/2 cup water
  • 1 cup peach-infused light rum
  • 2 tablespoons fresh lime juice
  • 2 tablespoons sugar
  • pinch of salt
  • 1 quart chilled club soda

Purée peaches in batches with water in a blender or food processor. Transfer puree to a colander lined with a fine cheesecloth set over a deep bowl and let drain one hour. Gather ends of cheesecloth and very gently squeeze any remaining juice from peach puree.  Discard solids.

Stir in rum, lime juice, sugar, and salt and chill at least one hour or until ready to serve (up to 2 days).

Serve by pouring into glasses filled with ice, filling approximately 3/4 full, and top off with club soda.  Garnish with slice of lime.
